10.2.2.2. The refrigerated chamber prescribed in subparagraph a of subparagraph 1 of the first paragraph of section 10.2.2.1 and the refrigerated rooms and compartments prescribed in subparagraphs 6 to 8 of the same paragraph must contain equipment able to maintain the temperature at between 0ºC and 4ºC.
The room or compartment prescribed in subparagraph 4 of the first paragraph of section 10.2.2.1 must contain equipment able to freeze freshwater products and processed foods which may or may not contain freshwater products in accordance with section 10.3.2.6.
The frozen storage room or compartment prescribed in subparagraph 9 of the first paragraph of section 10.2.2.1 must contain equipment able to maintain the temperature at not more than -18ºC.
The refrigerated room or compartment prescribed in subparagraph 13 of the first paragraph of section 10.2.2.1 must contain equipment able to maintain the temperature at not more than 7ºC, except where the remains of freshwater products not intended for human consumption are removed daily from the room or compartment.
The operator of a processing establishment must have a metal temperature probe, in working order, whose numerical scale accurately indicates the internal temperature of foods to within 1ºC.
